Btw, Ron do you still have that mac and cheese recipe? I know you had shared it at one point a while ago and I bookmarked it but I am on a different phone atm so can’t access my bookmarks. I think if I logged into Google I could but I am not sure if they are on Google. I am at the grocery store so would like to know if I need anything else for the recipe/sauce before I leave. We have a lot of cheese and butter at home but I am not entirely sure what is in the sauce. I have tried Googling various recipes but the trouble is I do not know which ones are good or not. I would prefer one that somebody has experience with. Thinking of making it with the shredded triple cheddar blend we have (Vermont White, Sharp, and regular) and/or possibly a little bit of mozzarella but the mozzarella might ruin it. Not even sure the triple cheddar will be good. Could pick up some other cheeses. We are making it with ham if that makes a difference for recipe suggestions. I think you had one of your own that you came up with, right? Or maybe that was just a white sauce and not mac and cheese? Or even if anyone has tried any of the ones on Google. I think my mom said she had a book that has one but figured I would ask here first. Figure you guys all have a lot more cooking experience than I do and might have some suggestions. But I know that it is also Christmas Eve so if you guys are too busy to find/post it or with family or whatever, that’s fine and totally understandable. I can try the Google ones but figured I would ask first. Hope everyone has a good Christmas!

Sharron, what you describe is a variant of Italian mac & cheese. I use Italian cheeses, pancetta, fresh tomatoes, and basil. It's always a pain to blend soft, medium and hard cheeses, but worth the trouble. I also love Lobster Mac and cheese, made mostly with claw meat and white cheeses.
well for sure rj, whatever variant, its darn good, if for no other reason, husband will always hang around for cooking, both southern and northern

Butter, Flour, Milk, Cheese, Salt and Pepper. And pasta of course.

KD the triple cheddar is a good base. I'd like a smoked Gouda and maybe a smoked cheddar to go with it and a pepper jack would add a bit of a kick. It's all about what cheeses you like to eat together.

Thank you RJ! This is all extremely helpful!! Thankfully I think we have all of those ingredients. All basic ingredients so we should lol and the store had cracker barrel logs for buy one get one free so I got two gouda. And I think we actually have a cheese tray thing at home with smoked gouda in it. So I can use the cheddar and then maybe add some of the gouda or smoked gouda. I’m not really sure what cheeses I like as I don’t eat many. But don’t think I’d like pepper jack so got gouda instead. I will try a blend lol

The brand of canned food the cats are eating now comes in 15 flavors and I buy all of them. And the dry food comes in 2 flavors, I buy both of those. That way they don't eat the same thing day after day after day.

Yeah, we usually rotate foods after every bag, usually about a month, but lately he just plain won’t eat some brands. I think it is hard for him to eat dry though now but idk. But we switch flavors and/or brands. We rotate between a few brands. The cat we sometimes rotate but I usually buy the 11-15 pound bags (depends what brand what size it is hut the big sizes, equivalent to 20 or 30 lb for dog food) so for her it lasts a few months at least so we don’t rotate often. I might start buying smaller bags and rotating. She is not a huge fan of dry food. She much prefers to yell at me until I feed her a can of wet lol but she will eat it. The current one she is eating but I don’t think she is particularly enthused. But at least she eats. We tried this kind years ago, like maybe 4, and she absolutely loved it, dove right in, and she did at first this time too but long term, she’s kinda eh. But she just would prefer to have a can. I need to also put a bowl of water down there though cause I think she prefers to eat dry with water right next to her. She drinks from the dog’s bowl upstairs lately (he doesn’t really drink from it and I refill it a lot) so I haven’t bothered to put a bowl by her food but I am going to do so again and see if that helps. For wet food, I usually just buy a case and use that for the month then don’t buy more for a while or switch brands and flavors. But sometimes I also buy individual cans to see if she will eat it first. She is not really picky at all thankfully but there are some she turns her nose up at. And I used to think she hated paté but then I realized she just couldn’t really eat it when left in the can so now I dump it on a plate and she eats it. But I took a risk this month by buying a case of food she had never tried before. But she LOVES it. Thank goodness lol

But like you said, I wanted to add variety and mix up the flavors. She absolutely loves that one though. And Earthborn has a lot of flavors but I don’t really like feeding her the seafood ones and they reek anyway so there aren’t too many options. I did try the ranch house stew one a few months ago but she really didn’t like it so I gave it to my friend with a kitten. So I don’t want to only give her that flavor. So figured I would go on the hunt for something different and found that one. She loves it.

And the dry food is Earthborn Holistics Primitive Feline. I like it. High protein. We tried Wellness indoor but a no go. I think she liked the CORE but haven’t tried it in a while. We tried Evo before too and she really liked that as did I because of the super high protein but Chewy doesn’t carry it anymore.
 
I like to use a variety of cheeses, pretty much whatever I have on hand goes in. Cooked, crumbled bacon is a nice addition.

i make macaroni and cheese the way mil made it, she made hers with her home canned tomato's in it. cook the macaroni, drain and rinse, mix sharp cheddar into the macaroni, (as much cheese as you like )add tomato's to your taste, cover with cheddar cheese, bake at 350* til cheese is browned, eat. i had always eaten plain ole mac and cheese growing up but when she introduced me to this , never went back to plain, something about the tomato's in it.:love
