His mom would kill and process enough chickens to make lunch for the field hands.... They raved so much that when Grandma and grandpa moved to Yuma Arizona she opened up a Restaurant... I think dad was about twelve by then. I suspect her asthma got the best of her there...

I call it Farmer mind. I got a dose of it growing up. We had to try to figure out how to do things to avoid going to the store. Town was too far away to be useful so we did a lot of our own repairs. Dad was also good at welding and fabricating
 
One of the best pieces of fish I've ever had was a swordfish steak. When my brother lived in the Keys, he went fishing with my youngest son and that's what they brought back. Bro cut it into steaks, wrapped it in banana leaves and grilled it.

Makes my mouth water just thinking about that. That was one of the best parts about living down there...all that super fresh seafood!
Dad and i used to scuba dive together. Talk about fresh seafood! Clams, scallops, lobster, and fish. We used to rent an island and go diving daily. My nickname with the club was Lobster Demolisher. First to the table, last to leave. Love my seafood!

any taco place that sells street tacos will sell them. Along with Cabesa and Tripas... By far my favorite is Tripas.... Pork intestines Bioled all day chopped up OMG... But very rich I can only eat two .....

Not a fan of Minudo either.... I want my cow stomach fried crisp in cornmeal.... Bout the only thing mom could make and not burn....:gig Tripas is just the mexican version of chitlins made the same way.... Washed and cleaned super clean... Then placed in a copper pot with water then boiled till the fat reneders out and the water boils off then it fries in its own fat...
