The NFC B-Day Chat Thread

Good morning, Debby.

Lol. We are "The Forgettables", or, are we "The Forgotten Ones "?

I don't think I've ever had prune cake. I imagine it is similar to a raisin and date cake?
My mom used to make that. My favorite cake of all time was an orange jello cake, that she made every year for my birthday.
One year she shipped it to me, USPS. It arrived filled with ants. I almost cried.
My husband eats sugar free, because of diabetes. I make him a chocolate fudge cake with monk fruit occasionally. It is seriously, the best chocolate cake recipe that I've ever made.
I use sunsweet prunes-- Growing up we were part of the sunsweet co op. I lived on a prune orchard until we sold and moved when I was 17.

I baked the cake in a 10 inch pan:

Prune Cake

2 Cups Flour
1 Cup sugar
2 Tbl Cocoa
1 tsp Salt
2 tsp Baking Soda
1 Tbl Corn Starch
2 Cups Prunes
1 Cup Prune Liquid
2 tsp Cinnamon
½ tsp nutmeg
¼ tsp cloves
½ cup Oil

Stew Prunes until soft Let cool before using. Finely chop prunes. Mix all ingredients in a mixing bowl. Bake in a 9X13 or 10 inch square Baking pan.

Bake 25-35 minutes at 350°.

Excellent! Hopefully every day will bring more of the same!
:frow Good afternoon Bruce, have a great day
