I’m up….ish. Good morning. Proofed my sourdough bread over night but my timing was a bit off when I started it last night so had to get up early just to make sure it hadn’t overproofed. It was fine. Then I couldn’t get back to sleep. <sigh>

I think it depends on the recipe. I’ve overproofed the dough before and it’s impossible to work with, like trying to stretch-and-fold cake batter, and bakes out kinda gummy. Makes okay toast, though.

Yep. Already! And Rueben will be 2 on the 31st. I’m gettin’ old!
