Lunch was grilled cheese and tomato soup with MILK not water LOL and Colby Jack cheese although next time I'm gonna go back to American or cheddar cause the Colby Jack was soooo stringy/chewy LOL but still good!!!

Also I'm cooking again right now. Cooking some hamburger for walking tacos later lol

Hope you are getting more rest LTay. How are your ribs doing?

It's a couple of notches better one day and a notch worse a day later. I'm taking more and more time off from everything but opening and closing coop doors. Making a call shortly to arrange help to move some bags of feed to the coops that are low or out. I slept a lot finally last night for me that is and then got another 3+ hours in a nap this morning. Those sleep installments of yours do you count going to bed at night the first installment and then every time you get up and lay back down as the next? I think I get 3-5 installments a day. I'm acting like I'm in my second childhood more every day. l am so ready to get back to my teens.

Good morning BYC friends.
I made diabetic fudge last night and it was the easiest recipe ever. And it tastes good but its very rich.
1lb swerve ( I used Lakanto)confectioners sugar substitute
1/2 cup of Hersheys Dark Cocoa
1 stick of butter chopped
1/4 cup of heavy cream
Sift sugar and cocoa into a bowl add the butter and cream pop into the microwave for a couple of minutes till butter melts
Stir it till smooth
Add 1TBSP vanilla
Throw in chopped pecans or walnuts
Stir well and place on a parchment lined pan and let set.

I hijacked this Janie. I need to curt sugar everywhere I can. I love my sweet tea and us spenda or truvia type sweeteners for that. I've never heard of Lakanto before but will look for it the next trip over to Doth;an.

I generally order it online from Walmart or Amazon. I like it because it doesn't have a bad aftertaste.
