Then go through all the kitchen stuff, I think I have enough stuff to stock another house.

It looks like it will be fabulous. I might add ground beef and turn it into a one pot meal.We both loved it and will definitely be making it again.
GREEN CHILI CAULIFLOWER CASSEROLE
2 Tab butter
3/4 Cup chopped onion
3/4 Cup chopped celery
2 Cups cauliflower rice
1 Cup shredded Monterey Jack cheese
1 Cup shredded Cheddar cheese
4 oz can green chilies drained
1/2 Cup full fat sour cream
1/2 Cup heavy cream
1 - 1 1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic
* Preheat oven to 325*. Butter an 8x8" baking dish.
* Cook frozen cauliflower rice then empty bag of rice onto a paper towel covered plate and squeeze as much liquid from it as possible.
* Melt butter in saute pan. Add celery and onions til tender. Add cream and stir to reduce liquid by half, until thick and creamy.
* In large bowl combine cauliflower rice, 1/2 cup of each cheese, chilies, sour cream and the veggie mixture. Stir until incorporated. Spread into the prepared baking dish.
* Bake at 325* for about 20-25 minutes until cheese is bubbly.
