Golden mushroom soup is a Campbell's upgrade that is virtually identical to the original but with fancier packaging (a gold "seal") and price tag... They both serve the same purpose.
@Latestarter no likey polenta? I don't make it or grits but something similar, corn meal mush. After its done cooking I add lots of extra sharp cheddar, butter, chopped ham, salt pepper and garlic powder. Served with a couple over easy eggs on top stick to your ribs breakfast...
I am going to give that Cream of Mushroom and Cream of Chicken mixture a try for gravy ... My gravy was good but its gone now.
WRT cornbread I like the sweet version. I dont make it often.
But I have been known to make Hoe Cakes. Cornmeal salt and very hot water stirred in till it makes a ball in the pot. Scooped out with a spoon rolled quickly in a ball and flattened with your fingers. Then thrown in a screaming hot pan with either bacon grease or corn oil.
When they are brown on the finger print ridges they are done. Great with Black Eyed peas or Greens or a big pot of beans and ham hocks.
All dads recipes from his mom.
Grandma and Grandpa were from Florida. They sharecropped across the bottom states Lived several years in the plains of Texas. Then in Yuma Arizona they tried their hand at running a restaurant. Eventually they made their way to San Bernardino and was able to buy their own land, and Raised Oranges.
I like oatmeal and cream of wheat/farina, but never really got into the corn based stuff... hate hominy... Don't do grits... never really caught on with me even though very similar to farina. Since I was born and raised in the north, we were never really exposed to the southern style cooking. Seems like down south they use a lot of corn based stuff while up north it's a lot of wheat based. I do like southern fried chicken though
My idea of a stick to your ribs Bfast (good for any meal IMHO) is fried potatoes/hash browns w/onions and garlic, topped with cheese, covered with over easy eggs, and a nice juicy thin sliced rib eye cooked medium rare or some nice loin pork chops on the side. Add toast and jelly, some OJ and a cuppa tea or coffee.. MMM MMM MMM. Good for 6-8 hours of work before hunger strikes again.
Mmmm Latestarter, sounds better than my other favorite, corned beef hash fried crispy topped with over easy eggs on top of toast covered with sausage gravy.. plate full...
