The trick with dehydrated eggs (one of them, there are a couple) is to store them air tight. If you do not have a way to vacuum seal, then an oxygen absorb-er is needed.

This is for baking:

They are very easy to use. Here's how to convert them to regular eggs:
  • 1 T. egg powder + 2 T. water for a medium egg
  • 2 T. egg powder + 1/4 c. water for an extra large egg (Remember that there are 16 T. in 1 C. to make multiple egg conversion easier)
  • When baking you do not need to re-hydrate the eggs before adding to your mix, simply add the needed egg powder and needed water to your mix and proceed as your recipe outlines.
  • If you need to half a recipe, you can half an egg with the powdered mix.
 
This conversation is phenomenal but about 3 months too late for me. I did get the leghorn egg today and a surprise egg from an EE. I have breakfast tomorrow.
I am still getting eggs from the Trader Joes and Whole Foods chicks I hatched last NYD hatch a long. It is great that you got some today!

I could have used it back when I was getting thirty eggs a week....

This summer I was getting 24 to 36 a day! I could not sell them fast enough so instead of feeding them back to the hens, I started dehydrating them.

I still have about 15 dozen eggs stored up. I have started rationing my customers. I have one that wants three dozen a week and another that wants 4 dozen a week. I am getting 10 to 15 eggs a day now and will get less as the hours of day light goes down.

The Trader Joes hens lay a lot of eggs even without light!

Love those TJ hens. I'm looking forward to hatching more (maybe NYD?) to replenish my flock.

I'm getting maybe one or two eggs every day, but only two hens are laying out of 8. I've had to cut my customers off because we have an Instant Pot in the house now (birthday present) and the egg custard recipe is TOO GOOD! It is seriously addictive. No water baths to deal with when cooking. And steel cut oats -- real, not instant -- in 9 minutes. BEST GIZMO EVER!!! (shameless plug)
