The start of my chicken tractor

Tonight I am cooking my first home grown fresh chicken dinner

It was delicious!!! I fed a family of 14 and everyone loved it they said it was soooo good. All ate 2nds and 3rds. I was nervous my kids and neices and nephew wouldnt eat it because they helped take care of them but it was no issue at all. I cant wait to cook the next one. Today with the leftovers Im going to boil it down and turn it into a great chicken soup.

Thanks! The process went well. We had another chicken for dinner tonight. I actually took the idea from you and we split the chicken in half and grilled it. It was delicious! Half I did BBQ and the other half honey terriyaki. It was moist and so yummy. The kids devoured it but Hubby was a littlle turned off by the half a body shape lol. So I had to cut up the chicken and serve everyone. He says he is going to cook the next one and seperate the body and marinate overnight and then grill. I hope your processing goes well. Good luck and sorry you dont have much help. I was actually shocked my family was so supportive. Our 2 BBWs are being processed in the am But by a local processor down the road. I cant bring myself to do the deed on the turks I like em too much.

I think that's gonna be one of the first meals I make. My mom used to male that all the time lol. What seasoning did you use?
I am trying to get the ingredients to make my favorite aros con pollo (chicken and rice) My family is mostly spanish so I grew up on rice and beans and chicken.
 
I love rice and bean dishes. My fam is not spanish but we do enjoy the food. Lucky us my sister knows how to make a few good spanish dishes

For my roasted chickens and veggies, first for the chicken, I brined it in a salt, little bit of sugar and water bath for about 5-6 hours in the fridge Then rinsed and patted dry and I let sit uncovered in the fridge for the skin to dry for an hour before cooking. At cooking time I rubbed butter and rosemary under the skin so it would flavor the breast as well as the skin and the butter helped crisp up the skin I sprinkled a little lemon pepper ontop of the skin. I also tossed in a little seasoning inside the cavity. I put all the veggies(potatoes,carrots,onions,celery,greenbeans) on the bottom of the roasting pan poured a box of chicken broth over it added garlic salt, onion salt, pepper, rosemary. I cooked with the whole thing covered for about 1/2 hour on a high temp dont remember which temp and then lowered the temp took off the foil and cook for another hour. Then I took out the chicken and recovered the veggies with foil and put them back in for roughly another 20mins to get a little more tender.
