If you MUST Open the bator take it into a HOT steam filled bathroom!!! I crank the shower and a small room heater. When its HOT and so steamy I can barley breath I will turn off the shower but not the heater. Open the bator in the hot moist room only!!!!! Remove the chicks and shells, add water if needed and close! return the bator to the propper place and continue! I have done this several times and am yet to lose a chick because of it.
Added: I DO NOT recommend opening the bator!!!!!!

As far as the waterer goes, I just got one of those screw on pieces for a quart waterer for quail. Its small enough that they cant get into it and drown, but allows them to get the water. I use that until thier about a week old then switch to a chick waterer bottom. Congrats on the chickies!!
