Have you calibrated any of these? A quick Google search will provide how to calibrate both the thermometer and hydrometer. I've learned not to trust any thermometer or hydrometer and to calibrate all of them if I can.

I don't know how easy it would be to calibrate these kinds of thermometers. Maybe try calibrating something like a alcohol filled glass thermometer and cross that information onto the thermometer in the incubator.
