Thermometer - Wide Range, Tracking - Advice Pleeeeeease!

For hobbyists who work with thermometers in non-incubator situations, I need a thermometer that tracks both the temperature inside a water environment through a sensor, as well as the room temperature where the unit is hanging, and will record a limited history of temperatures at intervals. The temperature range needs to drop below freezing and go above 100F. I'm hoping somebody can give me an idea of a decent unit that will fit my purposes.

The purpose, in case it helps, is to monitor a solar oven project I'm planning. I want to keep the sensor inside a container of water to monitor the internal temperature, as well as monitor the external temperature, and to be able to compare them over time. Of course I would prefer a unit that is decently accurate and won't be too expensive (although I know no $10.00 model will do this.... I've dug through tons of models on Amazon so far).

Any advice would be appreciated.

I've got a single chanel paper chart one like the Sealed Unit Parts Company unit linked below, left over from when I did property management. Used it for HVAC work, refrigerator and freezer repairs then. Now I use it to keep track of conditions in my greenhouse.

This one cost about $100.00 when I bought it. Looks like the price doubled over the last 10 years-
