I have two thermometers which are reading different.
I have a still air machine and on day 29. 3 have not pipped, 1 definitely has and the other i am unsure of. My question is which thermometer do i go by? Is this why my hatch dates are slow because it could be cold?

We won't know which one is right. You'll have to test them both.

Bring a deep pot of water to a boil and submerge the thermometer's stem at least 2 inches for about 30 seconds. The stem shouldn't touch the sides or bottom of the pot. The thermometer should read 212°F (100°C).

Now say for example one reads it at 214, then you'll know from now on that one's 2 degrees high.

If you're in the market for a nice hygrometer/thermometer, Govee is a great brand and has a phone app. This particular model is on sale for about $10.

That is a correct way to calibrate thermometers but those 2 do not have that range in temps. They need to be calibrated with ice and little water to read 32 degrees F

They just started external pipping surely if i grab the thermometers out now i lose all my humidity?

the more the better .. its good to have 3 thermometers for next time, the little digital ones are usually pretty accurate as long as the battery is good .. you can get like a 3 pack of them on ebay for 10 bucks ..
