Here she is with another weight gain, but she's still acting quite sick so I need to think about what to do next.

Yup,she is sick,you can tell by looking at her eyes,they just have that look.
She's showing very little interest in food, is yawning and now has odd little white specs in her throat. I suspect bacteria or yeast, but haven't ever seen them in person. Of course I have many drugs that will treat both, just need to figure out the best choice for her.

Symptoms of candidiasis are: loss of appetite,lethargy,white spots in mouth,delayed emptying of crop,swollen/mucus in crop. Has she been on any antibiotics as they can also cause yeast infections. In baby birds when hand feeding,we can transfer a yeast infection from our own hands/feed utensils as their immune system is not completely developed,but the same is true for older birds who have a compromised immune system due to some underlying cause.

I know you know all of this. I would start with a fungal infection.
