So they are in fact egg-laying hens?

One of them has only ever laid soft-shelled eggs since starting to lay a few weeks ago, with all flock feed and constant access to oyster shell.
I just pulled up a YouTube video for a new processing method and they look exactly like the “gray broilers” the guy in the video had so I got panicked

Yes, they're actually Duel Purpose.

If they're new layers, hiccups in egg laying can occur.

They're not grey Broilers, those are wide, & chunky.

Well since it's confirmed they are not meat birds I will simply say I think they are pretty and I hope you get loads of eggs from them.
