Okay, this morning was our official taste test to compare our girl's fresh eggs to store bought eggs. Our girls are almost 6 months old, and 4/5 of them are laying. I KNOW my BA, BR, and EE are laying, but I'm still not sure who's producing the fourth egg.
I scrambled a batch of their eggs, adding a little salt, pepper, and a dab of cream cheese (how I like my scrambled eggs). I did the same thing to the batch of store bought white eggs.
Here's what I noticed:
1. When cracking the shells, the fresh eggs' shells were harder than the store bought eggs
2. The whites were much more dense than the store bought eggs. The store bought eggs' whites were kind of runny/watery in comparison
3. The color of the yolks were much darker, more orangish in the fresh eggs
And in the cooked, scrambled eggs:
4. The fresh eggs did have more flavor, richer I guess; the store bought eggs (which I've always been content with) seemed a little bland in comparison
5. The fresh eggs seemed more dense texture-wise

I'm very happy with the fresh eggs! Here are the eggs I used...

I was happy to find that the one big egg I'd gotten (from my mystery layer) was a double yolker!

And you'll never want another store bought egg again.. I made deviled eggs last night from some store bought eggs and they tasted awful compared to my eggs...

i had one fellow who was buying my eggs tell me he was throwing the ones with the orange yokes out. i laughed and told him they were the best ones so he tryed them now he ask for the eggs with orange yokes lol.
