This years cooking goals . . .

I would like to learn how to make cheese, pasta, and learn how to can this year. I have been wanting to but have not....oh yeah and make tamales which I have been wanting to and to chicken to try.

This year I would like to"

Learn Hollandaise sauce
Can using a pressure canner
Dry garlic and make garlic powder
(and of course master sour dough bread, been wanted to that one for years and just started!!!)


Being in the kitchen is an amazing goal. Everyone should try to master something in the kitchen all the time. I wonder if I could get hubby to learn something else since he's finally got scrambled eggs down?!

guess a lot of us will be learning the pressure canner this year . . . they scare the blazes outa' me!
 
Katy-you will love, love, love your bread maker IF you take the time to learn to use it to its full potential. I have had mine for about 12 years & use it often-not daily --but usually weekly and not just for bread. If I didn't work maybe I would do my bread by hand but I have carpel tunnel so maybe I wouldn't!!
I am going to learn to make tamales, make more soap, learn to make sour dough bread and buy a pasta maker this year!!!
 
soap is on my next year list! I'm lucky to have a friend (who is a chemical engineer) who had been experimenting/learning that process for a year now and I am a wonderful recipient if his tests & trials . . . I kinda figure when he gets it just right I'll just borrow the recipe

My goals for this year are:
sauerkraut
try more whole wheat bread recipes
try more home made pasta recipes
kefir
Just got Sally Fallons Nourishing Traditions the other week, so that should keep me busy the rest of my life

Oh I know this isnt food but I want to start making my own soap

ETA: Forgot the OP. I'm working on learning more about brining/smoking meats this year, plus trying more sausage recipes and techniques. DH & I have a selection of recipes and methods to try.

I've also thought about cheesemaking and soap making. We'll see....depends on time.

Do you have Charcuterie by Michael Ruhlman? It's pretty well-done. Great info as well as recipes.

I want to learn to can this year and make jams, jellies, preserves, POSSIBLY pickles, etc.

I already bought a fantastic water-bath canner, rack, jar-lifter, and jars. I need a pressure canner, as well.

Those are my only real cooking goals for this year.

Oh, and of course.... to get more EGG RECIPES!!!
