Thoughts on Draft horses?

Drafts tend to be calmer than, say, Arabs or Thoroughbreds in general, but drafts are no different from any other horse - they can get startled at a new experience just like any horse. And a scared 2000# draft is even more dangerous! The "gentle giants" are that way because they are highly trained, used to a variety of environments, and worked daily.

What you say is so true. Drafts tend to be calm and gentle. but if something spooks them and they decide to bolt, a puny human holding on to a lead rope doesn't have much of a chance against a ton or more of frightened horseflesh determined to leave. They are extremely powerful.

Shoes aren't helpful anyway, except in certain circumstances, because the shoes damage the feet.

back when I was eventing on thoroghbreds, it cost me a fortune to keep them in shoes, and my farrier was inexpensive.
