So a BR hen with non barred roo, any/all barred chicks are cockerels, correct?
Now I know this is one to give away. Thank you.

Yep, that's exactly right. Barring is sex linked, and barred hens give one copy of the barring gene to all their sons and none to their daughters. Barred roosters, on the other hand, give one copy to half their sons and one to half their daughters, so the sex linking won't work that way.

As the only full barred chickens are BR hens and we have a Sapphire Gem, which I think typically has a BR parent but I have not been able to find if it's the hen or roo. Could the barred chick have come from the S Gem? Even so, it would still be a cockerel, correct? The roos are pure Buckeye and RIR. I'm just trying to learn a little more.
The most recent hatch could only have possibly 2 pure breds (Buck & RIR), the rest would be BYM. 15 chicks and hoping for 7-8 pullets.

No, all barred chicks have to have one parent that is barred. If a chicken has the barring gene, it's barred, they can't "carry" the gene and not show it, if that makes sense.

Also, since Sapphire Gems are sex linked, they're a mix of a not-barred rooster and a barred hen. That gives you all barred cockerels and solid blue pullets :)
