Toddlers are Quackers

My daughter does this thing to avoid scolding where she just cries louder than I'm talking.

Today I'd had enough.

It was between giving in, spanking, and shouting over her, and I don't like spanking.

Turns out, I can shout louder than the kids. I have a headache, my chest hurt for 2 hours, and my son is still avoiding me.

I feel like a horrible mother.

You were right to stick to your guns and let it be known that there are limits to acceptable behavior... better to establish the order of things now than have it continue to snowball. I think you are better off stopping tantrums and other obnoxious behaviors when they are little, letting it become the norm can become a disaster when they get older and expect to be 'the boss' in arguments with family or other adult authority figures.
Teaching littles that there are limitations is part of being a good parent, not a bad one.

My nanny cat took on new charges. He made me take my supplements until I got my memory back (herd me to them and not let me walk away until I'd taken them), looked after the kids until they were able to walk reliably (with questionable usefulness - he'd bite me if they cried for more 2 minutes and I didn't have them in my arms... but he'd also snuggle next to them when they were sniffly), and this morning, he was crying, pounding the door, with tail fuzzed... That's new... He follows me out, I check on the chicks - one runs out to where the cat is and he stays still, just giving me his "Timmy fell down the well, and you found the well" stare. They were out of water. I clean/refill their water dish, come back in, cat gives me his "mischief managed" look and walks off, tail back to normal.

This cat... He's got to blow the average cat lifespan out of the water. Hopefully a decade or two longer than the current record holder.

Not horrible. I think we’ve all been there.
