I made a pecan pie in the crockpot. I’m going to try a few things with the idea, but it’s definitely a win!
I realized that it’s something a child can do all alone.

Today I made a pecan, an apple, a strawberry rhubarb, and two pumpkin pies.
i still can't find my mixer, toaster, blender, knives, Dutch oven

I made choc chip cookies

Her ear surgery was apparently too late to prevent problems. Since her hearing was impaired at a critical time she didn't hear certain sounds correctly and even after correction she still can't pronounce things right.
I had this problem when I was little and did speech therapy

All good now!
 
Form a raw pie shell to the crockpot, fill it with your regular filling, and bake on high for 2 1/2-3 hours WITHOUT OPENING THE LID! :old The escaped heat makes it take longer, and adds (a little) more condensation.
Allow to cool completely, then cut and serve as if you used a pie plate.

Crock Pot Pecan Pie

Servings: 6 servings

Ingredients

  • 1 refrigerated pie crust
  • 3 eggs
  • 1 cup sugar
  • 2/3 cup dark corn syrup
  • 1/3 cup melted butter
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped pecans or a combination of chopped and whole pecan halves
  • Vanilla ice cream for serving

Instructions

  1. Spray the inside of a crock pot with cooking spray.
  2. Place pie crust in crock pot and mold it to fit the shape of the crock pit. (This is easier if you have a round crock pot instead of an oval one, but you can make do with an oval.)
  3. Stir remaining ingredients together, except pecans, until mixed well.
  4. Stir in pecans. I like to leave about half the pecans to arrange on top of the filling to make it look prettier.
  5. Pour filling into pie crust. If you reserved some pecans, gently place them on top of the filling.
  6. Cover crock pot and cook on HIGH for 2 1/2 to 3 hours.
 
I added more (flashing!) lights to the tree, got the star (she doesn’t like angels on the big tree. She wants it on the small tree) to stop falling over, and put in batteries (crazy, but convenient). Duckling is very happy. The Cinderella ornament arrived today. She doesn’t get to see them because I cannot handle anyone taking my tradition of collecting ornaments for her. I just put those ornaments on the tree while she is working on other ornaments. It actually works out since her ornaments are heavy, and she can’t get heavy ones to stay on.
