"Too many eggs?"- Is that possible?

I am getting about 5 hens this weekend and have done my research, estimating that I will get about 4 eggs a day. I have heard stories about haveing (spelled right??) "too many eggs," not being able to keep up with the hens! Does anybody have ideas about what I could do with the extras? My family eats maybe 2 eggs a week, so I definetly need some help! We don't have a farmers market near us, but I could definetly find one a little bit out of the area in which I live. I could definetly give them to my neighbors, and maybe some teachers (but that would be August). Thanks for all your help!

i worried about this too at first. we seldom ate eggs. but i wanted the chickens. since then i've been diagnosed w/ type 2 diabetes. i'm following a book by a doctor who specializes in diabetes who said i could eat all the eggs i wanted. since i've had to quit eating alot of other things i love, we are now eating a lot more eggs.
i'll sure be happy when my girls start puttin out.

I'm a big egg-eater, so I can actually envision myself having eggs for 2 out of 3 meals a day. My flock of 15 are still a few months out, but I plan on having them for: Breakfast (of course), baking bread (challah and good eggy sandwich breads), lots of baked goods, egg salad sandwiches for lunch (possibly with home-made mayo made with the eggs - I'm not a big mayo fan but think if I made my own it would be great), custard-y desserts ... actually I'm getting excited about cooking more recipes that call for either a bunch of whites or yolks, because the remainder I'll just cook up for the chickens. I'd usually feel bad about making a custard that used so many yolks or angel food cake that used something like 10 egg whites and now I'll have plenty of eggs to not feel guilty and the chickens to eat the other part of the egg for me! I'm sure you'll discover tons of ways to use the eggs!
 
pasta uses a lot of eggs. and angel food cake. and pound cake. and cheese cake. and deviled eggs. and if you DO find that you have more than you could ever use, there is always someone who will take them off your hands :)

You can always scramble up a few eggs and freeze them. I pour them into individual ice cube trays. One "cube" equals about one large egg for baking. I've used them in cakes and brownies. They cook up just fine. Sometimes I scramble a few and feed them back to the hens. They love them.
 
We have 6 chickens and I worried about this too - but everything worked out. I get between 2 and 5 eggs per day depending on how everyone is feeling. Between broodiness, molting, slower breeds and getting into a snit, not everyone lays everyday. We were not big egg eaters either, but I have standing requests from 2 neighbors and a co-volunteer for 1/2 dozen a week each. That barely leaves me with enough for Sunday breakfast for 2. And as I give them as gifts to friends as well, I have to plan ahead to see who gets the next 1/2 dozen. I buy pretty egg cartons for gift use (made my own cute labels) but ask neighbors/co-workers to please recycle their cartons - they give me the empty 6 egg cartons and I just have my girls refill them.

Only once did I have enough to give someone a full dozen...!

PS I am diabetic too and have a little egg feast once a week. I love them on toast, but have to limit the bread, so I pile the eggs on one piece of toast until it's buried under fresh eggs. I thank my girls every day when I collect their eggs.

PS I bake little cakes and give them to the neighbors with kids. I use a lot of eggs this way if I have eggstras. And my hubby loves herbed scrambled eggs now.

Your excess eggs can be broken into zip lock bags and frozen. That way if you bake a cake or need to use 1 or 2 eggs all you have to do is defrost them. Although after being frozen they dont fry or poach so well, but scrambled is fine. This is what my mum does with all the excess eggs that I give her. We just eat nearly all the eggs though. We love eggs. I love sending the kids off to school with a yummy cooked protien brekky. Helps with their learning ability.
 
I scramble and cook the extra eggs up and feed them to the chickens. Also crush the shells and feed those to the chickens as well.
When I do eat eggs, I only have the whites because there is no cholesterol in them. Cook the yolks up and you guessed it, feed the yolks to the chickens.
