too many scraps?

I work in a restaurant, I have a few customers who also have chickens and of course we talk about them. One day one guy says ,"with this job you probably pay next to nothing for feed" So I get thinking, and I put out a chicken bucket, and I collect scraps, and in the morning I dump the bucket and the hens go wild. If I don't have a bucket boy are they mad! I have pellets available all day too, obviously they are eaten slower when I feed scraps, but am concerned how much is too much. Don't want fat chickens, heard that may lead to fewer eggs and reproductive issues?
 
You'll have to keep track of the makeup of the scraps. If it's mostly veggies, meat, fish, fruit. That's not all bad.
I know of at least one restaurant that raises their own flock of chickens that feed them on kitchen scraps and discarded food.
I'd stay away from too much bread or things we might consider junk food.
 
What a great question. I am an avid juicer and have a huge garden so I was hoping to feed my chickens a lot of scraps. I wasn't sure how much was to much.
