Too much scraps?

I have 7 hens and 1 roo.

I recently made a contact with someone in the cafeteria at my job and asked her about getting Veg/fruit scraps from the prep kitchen.

I made my second pickup of scraps today, it's probably 10lbs of peelings/trimmings/seed cores, etc etc. I have a "composting" corner setup in my run that i'm just dumping this stuff into and let them tear through it. Right now I'm planning on doing this 2-3 times a week. I look through it as I dump it in to make sure there are no citrus, potato peels, etc etc.

Is it possible they will get too much of this stuff?

I have layer pellets available 24/7 in the run so they don't need to eat the scraps if they don't want them. I've heard that you should keep treats to a small percentage of their diet, so don't want them to get too much of this stuff if it's not good for them.
 
I think fruit and vegetable scraps (trimmings, peels, cores, stems) are perfectly fine for them. I'm fairly certain that the treats that should be limited are things like Scratch, Corn, High fat items... ect.

Cool, anything I can do to cut food $$$ is a good thing. Plus they should get good variety this way.
