Tougher membrane in eggs than store bought

Quote:
Poke a small hole in the fat end of the egg (into the air sac). They sell little gadgets called egg prickers or egg pokers in kitchen stores. I use a large sewing needle to poke a little hole before I put the eggs in the water. This allows air in to help the shell separate from the egg. Old eggs peel easier because air has entered the shell. Poking the hole in the shell allows fresh eggs to be peeled easier.

Try finding a sign like that here without driving far enough that your eggs would end up costing $10/dozen. If I lived in the country where I could fairly easily buy fresh farm eggs, I would. Here, I have no choice but to buy them from the store. If I do have to buy them though, I at least buy free-range, organic.
