I have no clue with regards to the topic, but I can see a way to reach a plateau: When water evaporates it leaves behind the minerals that were dissolved in it. Those minerals could gradually clog the pores making them smaller and smaller.
This could explain that the same amount of water seems to evaporate every time before reaching the plateau - the water in each egg contains about the same amount of minerals so whether it evaporates fast or slow the same amount of minerals will be left behind in the pores by the time a certain amount of water has passed them.
