It could be that the people that want soy free chicken are allergic to soy, my sister in law is.

I have a problem with store bought chicken and even some naturally/organic raised chicken, so I raise my own. I have determined only that in my case it is either their diet (wheat in my case) or the brine they are soaked in after processing. To lesson the impact of wheat in my birds diet, I mix my own scratch and make it 50% of their diet. I don't have feed mills anywhere near, so I mix them what I can get locally, which isn't enough to be nutrionally balanced, thus the feed.

For my SIL, I'll subscribe to your thread to see what your results are and what your customer opinions/reactions are.
