Trying to figure out what creature injured my jumbo cornish cross (GRAPHIC PIC)

Something very similar happened to mine. I think that would be a dog. If it was a wild animal it would've eaten where as a dog just played with it. About healing it don't panic. Mine had a much deeper cut and is now fine. All you need to do is separate it from other chickens (I put it in a dog kennel) then daily put peroxide on the cut then bandage it with a gauze pad, and keep it covered to avoid maggots. If your hen does get maggots used tweezers to pick the out then flood the hole they went into with peroxide to drown them. Also put the maggots in bleach. I would also recommend making a secure chicken run. I followed the steps I just told you and now my hen is perfectly healthy. (For Now) Hope this helps!
 
I once put a dominant hen in a pen with my layers. When I got home my neighbor was hollering over the fence that she was killing one of the chickens. I ran back there and found the big hen squating on the smaller hens back, and pecking the feathers and skin clean off the skull of that bird. Well, you know, I did like chicken stew and so I just had to have some that night, and look there! A GREAT BIG HEN JUST PERFECT FOR THE POT!! Yummy. My layers were privileged chickens. They had names, personalities, familiar manners, and they knew where they lived, and who fed them. That new hen hadn't made any egg rank yet, and so.... my layers were henhouse generals and colonels. On another occasion a little terrier got under the fence and tore up my little gray bearded hen. He didn't even eat her. Just tore her up. That made me really peeved. When a dog kills he bites and shakes. Another chicken plucks and pecks... hard. Your chicken was attacked by another bird. MaYbE a dog that had reservations about messing with its owners birds.
