why are they fighting each other

Because they are turkeys. I had a hen that picked a fight with the tom every time before she would let him breed her.

Depending on their ages, it could be as simple as a dominance fight. I also had a trio that from the start one hen was dominant over both the tom and the other hen. When the tom was ready to assert his dominance, they fought all day long for 3 days in a row before she finally would accept him as the dominant turkey.
