Turkey eggs take 28 days to hatch, stop turning at 25 days. We use the same settings as for chicken eggs in a GQF Sportsman - temp is 99.8 to 100F, Humidity about 40 to 50% during incubation and 60% -ish when we stop turning. If you can hatch chicken eggs you can hatch turkey eggs.
Once they hatch they need a higher protien feed than chickens, we use a 28% medicated game bird starter. Once again in the brooder same as chickens. One thing about turkey poults is they can be quirky for the first week or two. Make sure they aren't over crowded and that they are all eating and drinking. They can get pushed aside and will stop eating/drinking or never learn how. You can put something shiny in the water and feed to get their attention, what we do is time some chicks or keets to hatch about a week before the poults. The poults will tend to follow the other ones around to the feed and water.
