You can get turkey saddles from Ray Valentine of valentine hatchery if he still carries them. You can eat their eggs. They taste just like chicken eggs.

When my hen turkey is ready, she sings and goings in circles around the tom,rubbing against him, and then just sets down in front of him!As a matter a fact she started again today, she had babies 6 weeks ago. (they are seperated from her). Hope more eggs coming!
