My dad and I raised our first turkeys this year and when be started to prepare them I noticed the larger ones had sores between the breast area. It was light green color and seemed like it was scabbed over. Once we had the feathers removed we cut it out but now I'm wondering if it is safe to eat the rest of the turkey.

should be able to trim away affected area (as always cook thoroughly).

For description of etiology: http://www.fsis.usda.gov/pdf/psit_turkey.pdf (pp. 10-11).

To prevent it in the future, don't keep broad breasted birds longer than is optimum, don't let them roost on perches and make sure that they have plenty of deep, clean bedding.
