Turkey weight for butchering

Basically we are trying to figure out if they weigh x lbs right now what will they weight after they've been processed. So is there any standard for what the innards, feathers, etc. weight so we can estimate how large to let the turkeys get before processing to get the weight we want?

i found the percentages once, so i made a spreadsheet that i could track the weight on and differences, feed changes, etc... here's the weight scale i came up with...
