Turkey?????????

How do you tell what kind of turkeys you have? Mine are hatched by me but I forgot to look at what the eggs said before I threw them away. I looked at feather site but im at a loss between Buffs and Bourben Reds. Both were in the mix of eggs. Is there a distinct way of telling whos who? And hen or tom? They are about a 2 months old.
