It really boils down to the individual turkey and how they were raised, on how they will behave around small kids or adults.
Yes a turkey can be very friendly and well behaved, But that is the exception to the rule.
Turkeys like other poultry have there space, that they don't like other things getting into there space, this can be 2 to 3 feet around the turkey. The turkeys need to learn that it's ok for humans to get closer then this. Usually you have to start when the are poults teaching them this is ok. Or bribe them with certain treats that only humans give when they are close.
Turkeys do have a pecking order they live by, so humans must fit into this caste system they have. Generally Humans start off near the top to if you have one male you usually are number two, as long as you behavior does not appear to be a challenge your ok. If you have two to about 4 tom's then it gets tricky as there may or may not be enough room for them to naturally go up or down the pecking order.
Working turkeys do not make good pets, That is a turkey you are raising for mating or food should not be a pet. For the simple reason they will be treated differently and that treatment does not lead to a turkey being as easy going as it should when a pet.
A single turkey will be lonely and seek out companionship, so unless you can devote lot of time to it, it most likely will wonder off.
