You will have to open the incubator to turn the eggs. I turn mine 2 times a day. Before I open the incubator, I check the humidity, if I have to add water, I have warm water ready when I open it. I add the small amount of water and then turn the eggs.
 
The "Do Not Open the incubator" rule applies to the last three days, when the chicks are getting ready to hatch. That is when the humidity need to stay in the bator. So that will be when you stop turning the eggs and will have no reason to open the lid.
