Two eggs in one day?

Hi, my 7 Cochin hens are almost 7 mos old and are laying almost everyday now. We are actually getting more than 7 eggs a day for multiple days in a row. I thought they needed at least a full day to lay an egg. Is this normal? Are these eggs ok too eat still?

I know sometimes when my chickens were younger they did not go the full 24 hrs between laying an egg, but they iron out the kinks as they grow.
The other thing that could be happening is that they are laying an egg a day, but the eggs are missed or hidden until someone gathers them. Is the same person gathering eggs everyday?

I had a Turken who would occasionally lay two eggs a day but one was always smaller. It only happened for a couple months. So it's possible
