Type of Wood for Incubator

I will be building a cabinet incubator soon and have been trying to decide what type of wood to build it out of. Most Older Incubators are built from Cedar or Redwood rather than pine, walnut, Oak. Ect. I am thinking that the reason for this is because of the natural weather resistance of the wood making it suitible for humid environments such as inside an incubator. Can anyone confirm this or shed some light on the topic? I would really like to build my incubator out of Walnut but if there is a special reason they were built out of cedar im not opposed to that either
 
Here in the south I'd use good cypress myself for the reason they were usually built out of redwood or cedar which is their rot resistance.
