Well one time a rooster kept attacking me, and I clocked him with a baseball and threw a net over him and kept him there for about an hour. Apparently this "time out" worked because he was an angel ever since.
Then I had a rooster who flew on my head from the rafters, and the next time I saw him, I had him sit in my lap and petting him and fed him. He turned out to be really nice too.
But those were the only two I did that with. The other ones attacked visitors and kids and I put those in the freezer. I probably could have done the same with them but roosters are usually destined for the freezer here unless I really like them.
My current two adult roosters are very good. One is very friendly and the other is real shy.
As to their interaction with the girls, I think you misunderstand them. The roosters jumping on the hens is trying to mate with them. I usually leave them alone. When they're young, they can be a bit clumsy and pull out the feathers on the hen's back, neck or head, but they outgrew that for me. I don't have one hen without feathers and right now I have two adults and two teenage roosters. Yes that's too many, but all is peaceful in the jungle right now, so it's okay.
