I know I've asked a lot of questions lately, hopefully this will be the last one! So I have about 8 eggs that should have hatched 3 days ago, but they haven't. And before lockdown I saw the embryos growing in the eggs! What does this mean? Will they ever hatch? Should I do something? Thank you

So I was told not to take them out of the incubator bc it would shrink wrap them, so should I take them out to do the water test? And if the test shows there is still an embryo what should I do?

At this late stage, they're likely dead. If they haven't pipped, you can take them out for the test.
Shrink wrap only happens if they had pipped which can cause them to dry out if the humidity drops.
If there is bobbing, you can try to put them back in the incubator but clearly they don't have the energy to break free.
For one reason or another, embryos that don't become chicks by day 21 or 22 wouldn't ever have become live birds in nature.
Perhaps tell us more about the eggs, their origin and the breeder flock. (age, nutrition, breed, disease, etc.)

So I actually don't know much about the eggs. I live across the street from a park and take about 3 walks a day with my 10 month old siblings. On one of the walks I noticed a nest pretty out in the open. For the next 3 days I watched the nest for a mom but never saw one, so I assumed it was abondended, and thought I Could try to save the eggs if there was something to save. So I grabbed the eggs and put them in an incubator. And I'm assuming they are mallard duck eggs but I don't know for sure.

Sorry, I assumed they were chicken eggs. If you don't know the species, you don't know how many days it takes.
On top of that, you don't know when incubation was started in the nest so that further alters your chronological calculations.

I researched and I put the incubator to 28 days, it's 3 days past that!

Bahaha..... I found that funny. You just grabbed random eggs and tried to hatch them?! So, the 2 eggs that hatched soo far...... are the ducklings still alive?
