Here's one of my favorite quick and easy recipes. It is a wonderful way to use up some of your tomatoes when you've canned all you can can, given away until people vehemently refuse them, your dh will not eat anymore on the side at supper, and your arm is sore from hurling them to the chickens (I get a kick out of watching them run after them
).
TOMATO PIE
For the crust, use 2 cups biscuit dough mix (Bisquick, etc) and 1 1/2 cups water, knead a few times on surface powdered with extra biscuit mix. Spray/grease the bottom of a 9x13 pan. Spread dough out in the bottom. (Note: the Heart Healthy Bisquick behaves differently--takes less water. I found this out the hard way and had to make 2!)
Peel and slice tomatoes, as many as you need to cover the dough. Salt and pepper them now.
Mix together 1 cup of shredded cheddar, 1 med onion chopped and 1 cup of mayo. Spread over the tomatoes, sprinkle with basil, oregano or garlic powder...whatever you like.
Bake at 350 degrees for 30-35 minutes.
You can also spread the crust thinner and use a cookie sheet and MORE tomatoes.
You will need to increase the mayo/cheese proportionately to have enough to spread. Watch the time closely to make sure you don't overcook a thinner crust.
