For the first time, I pre-cooked the tripe in the crock pot. I added some bay leaf, onion, and celery. It cooked about 10 hours on low. After chilling and slicing it, I reheated it in sauce, and served over ziti.
My husband said it was fantastic! Finally! The very first time I cooked it, he thought it was great. Never again. I just couldn't cook it to the correct tenderness. Now I know how to do it.
