Mash them up with the guts of a baked potato, cheese, black pepper, veg if you want - peas and/or spring onions (scallions?) are good - then stuff all that back into the potato skin with a knob of butter on top and bake for a short while longer.
Add them to packet ramen along with a bit of veg (or make proper ramen but that's not quick & easy).
Make kedgeree or fish pie.
If you want ideas other than boiling them, frittata is a good way to use up lots of eggs and also slightly past-its-best veg and lots of other leftovers / dregs of things too.
