I think that ratio is good, I make my vanilla extract with 8 oz. of vodka and 3 vanilla beans. I cut a slit (only on one side) in each bean from one end to the other and then scrape a bit of the paste around to get it loose. I also shake my jars weekly. I use and gift mine at around 5 months. I need to start more for Christmas gifts. If you want double strength vanilla extract just add a few more beans. Hope this helps.
