On a completely whiny note: my local Target -- which has been selling Tabitha Brown vegan products, including delicious patties and sausages which are regularly out of stock -- is now CLEARANCING out all of the TB stuff!!!! I finally found great vegan "meats," and now, they won't be stocking them anymore.

In my research, the partnership with TB was supposed to last through the spring. Grrrr!!

@BelovedBirds, that sounds like me enjoying my Tofurky finds. One of the regional grocery stores just started carrying the peppered stuff -- which had been discontinued by another store months ago -- along with "barbecued chick'n chunks." I haven't tried those yet, but they are in my fridge.

Although I am trying to avoid processed foods in favor of more natural ones, I do still love Tofurky products. I made TWO sandwiches yesterday.

Tried to balance it out by making banana bread with a flaxseed "egg" and unsweetened applesauce. Why not use my own chickens' eggs? Because folks who buy my eggs are now willing to pay double what they did last year, which is still about half what eggs cost at the grocery. It doesn't cover the cost of chickens, but it does subsidize feed costs.

That's understandable, I have an aunt who occasionally buys eggs from me, it's hardly anything, but I figure it's something!
We get 14 a week though, so still plenty to feed back, and plenty left to bake with!

I will eventually try homemade egg quiche, but I love the tofu version SO much, it's delicious and the texture is perfect. I think I prefer it to real quiche.

I did move away from the processed foods, but I have to say, some of those snacks are just so addictive! I love vegan hams, chorizo, etc. I have it with crackers and various dairy free cheeses. Such a perfect snack!
