Veggie scraps and guts.........okay?

Is there such a thing as too many scraps? When we first got our year old chickens in September (never had chickens before that) they were laying like crazy right from day one. I fed them laying pellets from the same source as their original owners. Then I started adding kitchen scraps of all kinds and of course they loved it. However, their laying production slowed down plus their shells started to thin. I added oyster shell which seemed to fix that up but they still weren't laying as much. Perhaps this just all coincided with a molting period...what does everyone else think? Too many scraps? or just that time of the year?
