I have read lots in here about the need for good ventilation to keep down humidity. My question is what is a good percentage level for humidity in the coop? I have a thermometer/hygrometer I am putting in the coop to ensure my design has effective ventilation. I just need a number to shoot for!

The same number that you get for outside the coop.
 
😆Almost seems too simple.
I live in coastal VA, in the summer our humidity is really high. 🥵
I have windows all the way around my coop and aim a box fan on them during the summer on hot nights. It helps alot.
I also put a floor fan on them in their run and put out a plastic bin with a large chunk of ice in it to help keep them cool. That is all in full shade under the roof of the run.
Offer electrolytes in the water on particularly hot days with a second waterer with just plain fresh water in it.
 
Deep all day shade is best but....

I give a dose of Sav-a-Chick electrolytes/vitamins about once a week during heat waves.
It really seems to help....started this after they saved a heat stroked hen once.
Can mix up a smaller amount, just wrap the packet tight and store in a dry cool place.
Always have plain water available too.

BIG(9x14x2") chunks of ice last all day for wading, sitting, and sipping.
Much more useful to the chickens than frozen foods and treats.
