We’re nearly finished with our coop and was wondering if this was too much ventilation for winter. We have lows around 30 on a consistent basis and can drop to single digits on a rare occasion. The low end of the roof is 6” and the high end is
1 1/2’. The gaps will be filled with 1/2” hardware cloth.

Not too much especially for the summer. You can block off the north side in the winter to keep the cold cold wind out. You can block off more if needed but still leave a few inches at the top. Our temperatures fluctuate wildly.
Watch your southwest sides to make sure no sideways rain is getting in when the monsoon rains come.
