Verticle sprout trays?

There is a coop featured in the small coop section https://www.backyardchickens.com/web/viewblog.php?id=64832-chicken-coop . It kind of resembles a gazebo. Anyway...there is a picture of a vertical sprout or greens tray that they installed. They have a rack that a bin with fresh growing sprouts slides in to on the wall of the coop so the tray is at head level for the chickens. I presume they did this to keep the chickens from scratching up the sprouts. WHat I am trying to figure out is how they grew whatever greens are in the tray and how they get them to stay there when they hang it vertically. Does anyone use this method?
