Viable Eggs

Is there a way to tell if the eggs are viable before they get out in the incubator?

What he said. There is no way to tell wether a specific egg is fertile without incubation or cracking it open. You can crack a few, check eggs as you use them for fertility and get an idea of fertility rates. Here's a visual:
